Rosa del Castagno
This wine was born as a challenge – and one that I can say I won. The challenge was to produce an excellent rosé wine through the white vinification of our Syrah grapes here in Cortona. But there's more. The challenge was also to create a Syrah rosé that can be enjoyed not only in spring and summer, but throughout the year, as an alternative to white wine and also capable of evolving in the bottle. Balanced, textured, crisp, taut, juicy and intense, delicate and elegant, long... that's how I imagined it would be… and that's how people who have tasted it describe it. Just the rosé we were hoping for.
Rosa del Castagno is made only with Syrah grapes cultivated in our vineyards that are grown in a very low yield per hectare (a maximum of 50 quintals from 5000 plants). The fruit for this wine is carefully selected, especially just before and during harvest, which usually takes place at the end of August, and so earlier than the grapes harvested for our red wines: Castagnino, Il Castagno, Linfa, and Cuculaia). The grapes are exclusively hand-picked and carefully placed in small 15 kg. perforated crates for transportation to the cellars. The grapes for Rosa del Castagno are picked at dawn. After selecting the fruit we will use, we perform a true vinification “in white:” After very soft crushing and destemming (which leaves the berries whole or intact), the grapes are immediately pressed (for a maximum of about three hours) in a very delicate manner. At that point, only the must is transferred to steel tanks, where it then ferments at low temperatures (from 16° to 12°) for about 15 days without any contact with the skins.
After about six months of maturation and refinement at a low temperature on the noble lees, a period marked by frequent batonnages, followed by a period of stabilization and natural clarification in the cellar, the wine is bottled.
Its charming, pale pink color with amber hues, together with its fresh, floral, and fruity fragrance, its remarkable persistence, its strong acidity, its characteristic sapidity, and its intense minerality are the natural result of simple, ethical, and eco-friendly growing and winemaking practices. Rosa del Castagno is representative of the most “technologically-driven craftsmanship”, a product of the magnificent terroir of Cortona, and the fruit of our vineyard soil, to which we owe this delightful rosé version of Syrah.

Lovely freshness and poise to this vivacious rosé, which opens with a nose of strawberries, cream, pink guava and tulips. Medium-bodied and very lithe and subtle with a beautiful line of acidity puncturing the vibrant berries and cherries.

Delicate perfumes of rose, wild raspberry and cassis lift quietly from the bouquet, revealing some bitter almond and blue flower at the back. The wine ends with dusty notes of crushed limestone.
